Think you can’t cook in a dorm? Think again. Gillian’s here to prove that all you need is a little creativity and the right tools to make a full on meal. From breakfast to dinner, snacks to dessert, she’s whipping up vegan dishes right under her bunk bed using just an air fryer and microwave. The meals aren’t fancy — yogurt bowls topped with granola and fruit, cauliflower gnocchi, and veggie and tofu wraps are all in her frequent rotation — but it’s the dorm room cooking hacks she uses that make them stand out. (BRB, tossing our air-fried gnocchi in hummus next time.)

Pratiti, an MBA student at New York University with a passion for lifting, began creating South Asian recipes that focus on both taste and nutrition. Instead of reaching for a protein bar, she whips up pooda, a savory crepe made with chickpea flour. For a hearty, macro-packed meal, she turns to khichdi, a comforting Indian dish made with rice and lentils. Pratiti’s version has 14 grams of protein per serving, but she often boosts it to 34 grams with a scoop of Greek yogurt.
